Limitations

The apps’ supported languages depend on the Languages selected in macOS System Settings → Keyboard → Dictation.
Only selected languages with on-device support are available in AI Transcription. Some of them are: English, German, Italian, Spanish, Portuguese, Russian, Turkish, Simplified Chinese.
